Florida Citrus Sofrito
Ingredients
8 ounces Florida orange juice
4 medium onions, chopped
3 medium green peppers, seeds removed
2 red bell peppers, seeds removed
4 large tomatoes
20 cloves garlic, finely chopped
1 bunch cilantro leaves
1 bunch parsley leaves
Preparation
Combine all ingredients in food processor and purée until blended. Use sofrito to simmer fish, chicken or pork; cook meat to desired doneness. Refrigerate remaining sofrito.
Makes approximately 10 cups
