Florida Orange Juice Bubble Tea

Ingredients

2 ounces cooked tapioca pearls*
1 ounce flavored syrup, optional
1 cup ice
10 ounces Florida orange juice

Preparation

Place cooked tapioca pearls in bottom of a clear glass.*  Pour syrup over tapioca pearls, if desired. Place ice on top of tapioca pearls.  Fill to top of glass with Florida orange juice.

Serving suggestion: Serve with straw just slightly wider than tapioca pearls.
Note: Tapioca pearls and straws available at Asian specialty markets.

*To cook tapioca pearls:
1 cup tapioca pearls
7 to 8 cups water

Place water in large pot and bring to a boil. Add tapioca pearls; tapioca will float in the water. Cover and boil for 25 minutes. Remove one pearl; cut in half to check if tapioca is cooked through. If center of tapioca is still mealy, continue cooking and check every 5 minutes. When tapioca pearls are thoroughly cooked, turn heat off, cover pan and let tapioca sit in water for 25 minutes. Rinse the cooked tapioca pearls in warm water; drain well.
