Spicy Citrus Pasole
A splash of citrus gives a fresh taste to this Mexican classic.
Ingredients
1 ½ pounds boneless pork sirloin, trimmed and cut into ½ -inch cubes
1 medium onion, chopped
2 cloves garlic, minced
2 cups 100% Florida orange juice
2 cups beef broth
1 (15-ounce) can hominy, drained
1 (15-ounce) can diced tomatoes
1 (4-ounce) can diced green chiles
½ teaspoon oregano
Salt to taste
Pepper to taste
Optional Toppings: Orange wedges, sliced radishes, shredded cheese, chopped cilantro, jalapeno peppers
Preparation
In 4-quart saucepan, sauté pork, onions and garlic over high heat until onions are tender. Stir in orange juice, beef broth, hominy, tomatoes, green chiles, oregano and salt and pepper to taste. Bring to a boil; reduce heat to medium-low and cook for 20 minutes. Serve in large soup bowls with desired toppings.
